Fine de Claire Oyster:  Taken from the largest oyster producing region in the world, the oysters are finished in knee-deep salt ponds for a minimum of one month, during which they fatten and take on a sweeter, fruitier flavor from the water and phytoplankton in the ponds.

St Vaast Ostreargent Oyster: A shell of regular shape and slightly iridescent golden yellow color, generous meat and a crisp and sour flavour enhanced by marine notes from the seas of Normandy.

Emeraude Oyster: This oyster is green in color and has an attractive brininess combined with the taste of fennel.

Tsarskaya Oyster: A special oyster recognized several times by the renowned French Agricultural Exhibition. This oyster represents the essence of what the Russian monarchy loved about Cancale oysters, making it a real “Pearl of the Tsars”.
