Italian white truffle season has arrived at Michelin-starred Elements restaurant and Chef de Cuisine Keng Vichianrat and his team will be serving up wonderful dishes featuring the ‘diamond of the kitchen’ using French culinary techniques with Japanese ingredients.
Widely considered to be among the best truffles in the world, fresh Italian white winter truffles are also known as Alba truffles. The highly-prized fungi are harvested in the fecund earth of mountainous woods, particularly in Italy’s northern Piedmont region. Truffles give off an intoxicating nutty or woody aroma and add great depth of flavour to any dish, hence white truffle lovers can expect a fungi feast with highlights on the Elements menu including braised short-rib with Jerusalem artichoke, white truffle and kombu sauce and much more. Servers will also be on hand to present truffles and offer shavings of the precious fungi to diners at tableside.
The Italian White Truffle dishes are offered at market price. Available at Elements restaurant every Tuesday – Saturday from 16 October – 1 December 2018, 6 p.m. – 10:30 p.m.
